Ingredients
3 x 250g packets Arnott's Marie biscuits
1 ½ cups chopped walnuts (can be substituted with choc chips)
250g unsalted butter
1 ½ cups caster sugar
4 tbsp cocoa
4 eggs, lightly beaten
375g chocolate buttons
3 tbsp rum
180g extra unsalted butter
Method
- Coarsely crush biscuits, then place into a lage bowl and combine with chopped walnuts (or choc chips).
- Place butter and sugar in a saucepan and cook, stirring over low heat until butter has melted and sugar is disolved. Stir in cocoa. Remove from heat and fold in lightly beaten eggs. Pour mixture over biscuit mixture and stir until well combined. Press mixture into a 5cm deep slice or baking tray with base and sides lined with non-stick baking paper. Place into refrigerator for 1 hour or until set.
- To make icing, place choc buttons, rum and extra unsalted butter in a double boiler saucepan (or place into a heatproof bowl then place over a saucepan of simmering water) and stir until melted. Be careful not to overheat the icing mixture as it can burn easily.
- Pour chocolate mixture over chilled set slice, then place into the refrigerator for 1 hour or until set.
- Remove from pan then cut into slices and serve.
