Sweet Lemon Slice

Handy Hint

After slice has chilled, the condensed milk filling tends to soften the biscuit base, making it easy to cut and it tastes delicious.

Ingredients

1 x 250g packet Arnott's Scotch Finger Biscuits
1 x 395g can sweetened condensed milk
1/2 cup lemon juice
1 x 300ml carton thickened cream 
2-3 fresh passionfruit or 1 small can passionfruit pulp

Method

  • Line based and sides of a square 20cm x 20cm cake tin foil or non- stick baking paper, allowing a 2cm overhang.
  • Place a layer of Arnott's Scotch Finger biscuits on the base of the  tin.
  • In a bowl combine sweetened condensed milk and lemon juice. Pour over biscuit base and refrigerate for 2-3 hours.
  • Place cream in a bowl and beat, using an electric beater, until firm. Spread over chilled slice then drizzle passionfruit over, cut into squares and serve.
